2016 you were a real monster.
I spent most of the year processing a horrible breakup and just trying to get by one day at a time. As the year progressed, I found myself feeling more and more lost. It’s officially 2017, 1 day down, 355 to go and although I never set New Years resolutions (insert cliché resolution here to lose weight), I am declaring that this is the year I finally find and do the things that make me happy.
What are those things I speak of? Well, I honestly don’t know. I do know I find joy, comfort and solace in food. Food has been my creative outlet of expression for the better part of the last 10 years. Cooking calms me down when I am mad, it gives me purpose when I am feeling low and it makes me happy when I am hungry.
I do not pretend to be the best writer in the world, I apologize in advance for my grammatical errors, or know everything there is to know about baking. This is my way of sharing my ups and downs, through food, including my successes and failures. 2017 here I come!
To start the year off on the right foot, I made one of my absolute favorite things- Caramels. I have always been a caramel over chocolate kinda girl. I was probably in high school the first time I made caramels with my mom. She got out my Grandma’s WWII cookbook which had a really basic recipe. The cookbook itself fascinated me, still does to this day. The book is full of creative recipes that used minimal items, as there were various food shortages during that time frame. Food has evolved a lot since then, so many of the recipes in the book are probably pretty meh, the caramel recipe though is still my absolute favorite recipe with a few edits on my end.
